During the last recession, food-nutrition graduate Beth Moncel found herself broke -- yet unwilling to sacrifice good taste and good nutrition to the cheap, processed foods that were readily affordable. She found that through careful planning, strategizing, and purchasing, she could make healthy and delicious meals and also cut her grocery bill costs in half. She launched her blog Budget Bytes in an attempt to share her good fortune with everyone else in a similar situation, and quickly found that her recipe ideas were widely appreciated and shared, and that her blog quickly gained traffic and repeat visitors. Her blog quite rapidly hit the million-reader mark, and her cookbook, Budget Bytes, followed in 2014.
